It’s universally acknowledged that wooden skewers make food fun, and as long as your kiddo is old enough (and sensible enough) to wield a skewer in a non-pointy way, this form of food presentation is a winner.

Rainbow fruit skewers are a classic go-to at home, but if you’re looking for something lunchbox-worthy, with an international flavour, then we’re excited by the idea of pizza on a stick and we’re pretty sure your schoolkid will feel the same way!

So, we present to you a recipe for Hawaiian pizza skewers, courtesy of dad and foodie, George Georgievski.

With just the right mix of sweet and savoury, these beauties are easy to make and munch – and they’ll jazz up your kiddo’s lunchbox as we go into the ‘totally lost for inspo’ part of the year.

To make the Hawaiian pizza skewers, you'll need:

  • 3 slices of bread
  • 2 tbsp salt-free tomato paste
  • 120 g (1/2 cup) small bocconcini, drained and halved
  • 3 slices of deli ham off the bone
  • 6 small wooden skewers
  • 95 g (1/2 cup) pineapple pieces (fresh or canned)

Then, simply do this:

Preheat the oven grill to 240°C and line a baking tray with baking paper.

Using a small-ish cookie cutter, cut 3–4 circles out of each slice of bread. Smear the tomato paste over them and add half a bocconcini ball on top. Place the circles on the baking tray and pop them under the grill to melt the cheese a little and toast the bread. This should take around 2–3 minutes.

Cut the ham using the same sized cookie cutter and fold the circles in half.

Then it’s time to assemble.

First, thread a toasted bread circle onto a skewer, followed by a piece of folded ham and a chunk of pineapple. Repeat the whole process again to fill up the skewer.

Repeat to make six Hawaiian pizza skewers.

These are best made fresh and popped straight into the lunchbox.

George's tip:

“Be sure to snip the points off the wooden skewers with some scissors, so that the little peeps don’t accidentally stab anyone with them!”
